The Fastest Way To A Man’s Heart…

Have you heard of this before? “The fastest way to a man’s heart is through his stomach.”
Or as a friend once told me, “…through his third and forth ribs.”
Just so you know for later…

Well I like the first one better, usually less of a mess… unless I’m baking of course… 🙂
Not really I’m pretty neat when baking

I love to bake. It’s one of my favorite things to do. And best of all I love to give it away. So you might just be lucky enough to get some goodies from me. Especially around the holidays!

Today I made two delicious items, both turned out to be chocolate.
First came the Chocolate Zucchini Bread.
Mom gave me a huge zucchini last month and I decided to shred it and freeze some for later use. Brandon requested chocolate bread so I found a recipe and suped it up a bit. 🙂

So here is what I did.

Beat 2 cups sugar, 1cup oil, 3 eggs and 3 teaspoons vanilla extract

I used a regular bowl and fork, even though I do have my FABULOUS Kitchen aid mixer!!

Don’t forget the vanilla. Make sure to use the very best quality.

Combine 2 1/2 Cups Flour, 1/2 cup baking cocoa, 1 tsp salt, 1 tsp baking soda, 1 tsp cinnamon and 1/4 tsp baking powder.

Gradually beat into sugar mixture until blended.

Stir in 2 cups shredded zucchini and chocolate chips!
At this point I used my hands. Because ya know, using your hands means you love it. right? well it was easier really.

Now I’m gonna let you in on a little secret here. Shhhh… come close…closer….TOO CLOSE!!
The best kept baking secret outhtere is parchemnt paper. That’s right, parchment paper. USe it to line anything you bake and it is amazing!! no more scraping off of pans and baking sheets, or breads being half stuck to pans.
Anytime a recipie says to grease something, use parchment paper instead!

PLus you can easily pull the bread or cake or whatever off of the hot pan to cool without worrying about timing it just right so it doesn’t stick because it’s been left in too long or falls apart cause it wasn’t cool enough.

Bake at 350 degree’s for 50-55 min. I really ended up baking it for an hour and a half. just to make sure it was all the way done. the zucchini gives it extra moisture. You really just need to know your oven and baking experience. The more you bake the better you are!!
